The people here a thrifty in there tactics to over come there poverty that somewhat surrounds them with schemes that put the western world to shame. For example communal kitchens in bringing one potato you get a meal in return as everyone adds to the pot. This is just one way of thinking differently about the process of communal living - it started in the Andes when harvests were poor or failed.
Food is in the heart of Peruvian culture as with such a dynamic and diverse range of people and there way of living. Food is something that celebrates the mixtures of traditional ways and flavours, with the colonial and modern way.
